Yum!: Chicken Enchilada Soup



This is such a great and simple recipe. The important ingredient is the special seasonings you purchase from Homemade Gourmet. (No, I don't sell the stuff. I just really think this is some yummy soup.) This is perfect for a chilly winter night. I make mine with shredded chicken. Enjoy!

Ingredients
7  tablespoons Chicken Enchilada Soup Seasoning
1  14.5-oz. can diced tomatoes
1  cup milk
4  cups water
1  12.5-oz. can diced chicken or 1 cup cooked shredded chicken

Directions
In a large saucepan over medium-high heat, combine seasoning with diced tomatoes, milk and water.

Bring to a rolling boil, reduce heat and simmer 15 to 20 minutes; stirring occasionally.

If desired, add cooked chicken and cook until thoroughly heated.

Serves: 8
